Chips Ahoy



I am excited to say that I was asked to make the desserts for a client meeting this week. This was one of my first professional gigs, so I really wanted to wow the crowd. The client wanted something small (no one likes to stuff their face during a meeting) so I decided to do a Chips Ahoy theme trio of mini desserts. Up front are white chocolate trifles with cookie crumbles. In the middle are vanilla cupcakes with cookie dough frosting and at the top are cookie sandwiches with a dark chocolate ganache filling. 



These all got rave reviews, but the cupcakes got the most praise. Everyone was amazed at how the frosting tasted exactly like cookie dough. I would definitely use this recipe again, possibly as a filling to a cake, or just to eat with a spoon!

Cookie Dough Frosting (Laura's Sweet Spot)

3 sticks butter, room temp
3/4 cup light brown sugar
1/2 tsp salt
2 1/2 cups powdered sugar
2 tsp vanilla
1 cup AP flour
3-4 TBSP milk

1. In a stand mixer, beat the butter, brown sugar, and salt until light and fluffy.

2. Add the powdered sugar and beat for about 2 minutes. Add the vanilla and flour and beat until just combined.

3. If too thick add the milk, 1 TBSP at a time until you get the consistency you want.

4. Pipe onto cupcakes and sprinkle on some mini chocolate chips. Enjoy!
